Recipe to try this weekend...

If you are looking for an amazing treat this weekend you should try these cookies! My friend Heidi made these once for a craft-night and I immediately had to have the recipe! They are delish right out of the oven when the marshmallow is still gooey...so if you have a craving this weekend these are sure to satisfy. yum.
Chocolate Marshmallow Cookies
3 Cups Flour
2/3 Cup Unsweetened Cocoa Powder
1/2 tsp. Baking Soda
1 Cup White Sugar
1 Cup Light Brown Sugar
1 Cup Butter ~ Softened
2 Large Eggs
2 tsp. Vanilla
1 Cup Milk Chocolate Chips (also good without these)
8 oz. Mini-Marshmallows ~ Frozen (keep frozen until ready to bake)

Combine flour, cocoa & soda. Set aside. Combine sugars in large bowl. Blend in butter, add eggs and vanilla and beat until light and fluffy. Add flour mixture and chocolate chips, blending at low speed until combined. Batter will be stiff.

Gather 4 frozen marshmallows in the palm of your hand and cover them with a heaping tablespoon of dough (you made need a bit more). Wrap the dough around the marshmallows, make sure that the marshmallows are completely encased in the dough. Form into a ball and place on ungreased baking sheet 2" apart. Bake 8-9 minutes in preheated 400 degree oven. Cool on pan 2 minutes and transfer to cool, flat surface. Enjoy.
