Panko...

Panko (PAHN-koh) Bread crumbs used in Japanese cooking for coating fried foods (but I bake mine). They are coarser than those normally used in the United States and create a deliciously crunchy crust.

I have used the traditional Japanese version...but I also really like the Progresso version (shown above). So if you are wanting to try a baked version of this delicious coating you can test out Martha's Panko-Crusted Chicken Bites. I didn't try the sauce that went with this particular recipe...but they are pretty much good dipped in anything!
